- 1/4 cup milk
- 2 eggs
- 3 cups raw potatoes, diced
- 1 small onion, quartered
- 3 tablespoons flour
- 1 teaspoon salt
- 1/4 teaspoon baking powder
- Put all ingredients in order listed in blender, blend about 10 seconds.
- Pour small amounts onto a hot griddle or frying pan.
- Fry until brown on both sides, turning once.
Makes about 18 pancakes.
