Happy Holidays from Amil’s Inn Bed and Breakfast!

It has been such a wonderful Christmas season here at Amil’s Inn. We have been busy serving guests and focusing on the real meaning of Christmas—celebrating the birth of Jesus.

We would like to share with you a favorite German cookie recipe that was shared with us many years ago by our neighbor, Marilyn Roerig of Sparta, Wisconsin shortly after we were married.  Now 30 years later, I visited Marilyn and gave her a small glass jar full of Pepper-nuts or as some say ‘Pfeffernusse’. 

I really enjoy putting on a kettle of hot water and sipping on a cup of tea.  So, even though it’s after Christmas, why not invite a neighbor or friend over and enjoy some Pepper-nuts!   

Plan on a whole afternoon baking because it makes an ice cream bucket full of cookies.


            2 cups sugar

            1 cup shortening

            1 cup dark or light Karo syrup

                 Boil together a few minutes. Stir well.


            Let cool, then mix in 2 beaten eggs.  Then add the following:


                        5 ½ to 6 cups flour

                        ½ teaspoon ginger

                        ½ teaspoon cloves

                        ½ teaspoon baking powder

                        2 teaspoons baking soda

                        1 teaspoon salt

                        1 ½ tablespoons anise powder


            Make rolls about 12” long and 1/2” thick.

            Chill overnight.

            Cut rolls about ¼” thick.

Put on greased baking sheet or parchment paper 2” apart and bake at 375 degrees for about 4 minutes-be sure you watch these closely.

            Remove immediately from baking sheet when taken from oven.

            Store in a tight sealed container.  I usually store them in a clean ice  cream container.


Take Time for a Cup of Tea

Here at Amil’s Inn Bed and Breakfast, we are waiting patiently for the delicate crocuses to thrust their heads through the icy, cold spring soil.  There is some ice and snow still left on the north side of the slopes of the Kickapoo Valley.  We are starting to get a few warm days but the nights are still cool.  Many of our neighbors including the Amish are tapping maple trees to collect sap for cooking down to make homemade maple syrup.

As we go about our daily tasks of preparing to garden and complete that much needed lawn work after a long, hard winter, let us not forget to take time from our busyness to enjoy a cup of tea and delight in the simple things of life.  This past winter, I had a birthday and a dear friend surprised me with a beautiful crocheted tea cozy.  So as you make summer plans for your week or weekend get-away, consider Amil’s Inn where you can sit back on our front porch, enjoy a cup of tea and some cookies and take pleasure in the simple things of life and if you are fortunate witness some Amish buggies going by!
