• 1/4 cup milk
  • 2 eggs
  • 3 cups raw potatoes, diced
  • 1 small onion, quartered
  • 3 tablespoons flour
  • 1 teaspoon salt
  • 1/4 teaspoon baking powder
  1. Put all ingredients in order listed in blender, blend about 10 seconds.
  2. Pour small amounts onto a hot griddle or frying pan.
  3. Fry until brown on both sides, turning once.

Makes about 18 pancakes.
